1. Cultivation — Roots in Balochistan

Our olives grow in ancestral groves across Balochistan, where soil, climate and traditional care produce fruit with distinctive character. We follow time-honored, low-intervention farming practices: minimal tillage, no synthetic additives, and careful grove stewardship to support natural flavor and resilience.

2. Harvesting — Handpicked at Peak Ripeness

Olives are handpicked by experienced teams who know each grove’s rhythm. Harvesting at the right moment — neither too early nor too late — is crucial to balancing aroma, bitterness and antioxidant levels.

Why handpicking matters: reduced fruit damage, better oil yield, and a truer expression of the grove.

3. Prompt Transport — Fresh to the Mill

Right after harvest, fruit is moved promptly to our mill. Speed is essential: the shorter the time between picking and pressing, the fresher and more nutritious the oil. We transport fruit in ventilated containers and mill within hours to preserve quality.

4. Cold-Pressed Extraction — No Heat, No Compromise

At the mill, olives undergo cold-press extraction — a mechanical process without heat or chemical solvents. Cold pressing preserves volatile aromas, antioxidants (polyphenols) and the natural balance of fatty acids that define premium extra virgin oil.

5. Natural Filtration & Settling — Gentle Clarification

After extraction, oil is allowed to settle and undergoes natural filtration where necessary. We avoid aggressive processing: the aim is clarity while retaining the oil’s natural character. For some batches (notably our wild oil), minimal filtration preserves robust polyphenols and earthy notes.

6. Quality Control & Sensory Evaluation

Every batch is tested by our team for sensory profile (aroma, taste, bitterness, fruitiness) and basic chemical markers. We measure acidity and screen for clarity and aroma defects. For customers or partners who require advanced testing, third-party lab analysis can be arranged on request.

7. Traceability & Batch Coding

Each production run receives a batch code so we can trace oil back to grove and harvest date. This traceability ensures accountability and gives customers confidence in provenance and freshness.

Oil is bottled in food-grade containers designed to protect quality: UV-resistant glass or coated tins, airtight caps, and premium labeling. Our packaging protects the oil from light and air — the two greatest enemies of freshness — and presents Zayteen as the luxury product it is.
